Season'd Bean Sprouts
Seasoned Bean Sprouts

Ingredients:
4 oz of bean sprouts, 1 tsp of chopped garlic or 1/2 of garlic power, 1 tsp of chopped green onion, sesame seed oil, salt
Directions:
1. Boil water in a pot, and cook bean sprout for about ten minutes with salt. Put the lid on while doing so.2. Pour water over a sift. Drain all water, and leave bean sprouts. Put the bean sprouts in a bowl.3. While bean sprouts are still warm, put a few drops of sesame seed oil and mix.4. Add salt, garlic, green onion, sesame seeds and mix.
Portobello Mushroom Burgers
Ingredients
4 Portobello mushroom caps
1/4 cup balsamic vinegar
2 tablespoons olive oil
1 teaspoon dried basil
1 teaspoon dried oregano
1 tablespoon minced garlic
salt and pepper to taste
4 (1 ounce) slices provolone cheese
Place the mushroom caps, smooth side up, in a shallow dish. In a small bowl, whisk together vinegar, oil, basil, oregano, garlic, salt, and pepper. Pour over the mushrooms. Let stand at room temperature for 15 minutes or so, turning twice.
Preheat grill for medium-high heat.
Brush grate with oil. Place mushrooms on the grill, reserving marinade for basting. Grill for 5 to 8 minutes on each side, or until tender. Brush with marinade frequently. Top with cheese during the last 2 minutes of grilling.

Udon Noodle Soup
1 8-ounce package udon noodles
4 tablespoons roasted peanut oil, or 3 tablespoons sesame oil mixed with 1 tablespoon vegetable oil
1 12-ounce package firm tofu, cut into 12 pieces
Kosher salt and freshly ground pepper
1 11-ounce package Asian cooking greens or baby spinach
1 bunch scallions, thinly sliced diagonally
Large pinch of red pepper flakes
3 tablespoons soy sauce
Pinch of sugar
Directions
Cook the udon noodles as the label directs. (Don't overcook or they will get mushy.) Drain, reserving about 1/3 cup of the cooking water.
Meanwhile, heat 2 tablespoons oil in a medium skillet over medium heat. Pat the tofu dry and season all over with salt and pepper. Add the tofu to the skillet and sear until golden brown, about 2 minutes per side. Set aside and keep warm.
Add 1 tablespoon oil and the greens to the skillet. Cook, tossing, until just wilted. Add the scallions, red pepper flakes, the remaining 1 tablespoon oil, the soy sauce and sugar. Add the reserved cooking water; heat to create a broth. Divide the noodles and greens among 4 bowls and top with the tofu.

2010 HANDBOOK
Health:
1. Drink plenty of water.

8. Sit in silence for at least 10 minutes each day.
9. Sleep for 7 hours.
10. Take a 10-30 minutes walk daily. And while you walk, smile.
Personality:

I LOVE WINTER (NOT REALLY)
I love winter; the cold air gently kisses my cheek on the left of its coming. Winter brings warmth to my soul as I sip hot coco and inhale its deep aroma; each sip sends calm to my veins.
Soft sweaters and fur-lined boots cover me but not for protection from the cold, they keep me in safe and secure.
Snow’s gentle presence covers the roof tops and provides itself as a blanket. Each white crystal brings light to my eyes and I can behold all of winter’s beauty. I love you winter, kiss my cheek on the right of your going.
